Smashed Avo on Toast – 
Bill Granger is often credited with inventing Avocado on Toast, but there is a good argument that it most likely first arose in Mexico.

  • Roughly chop the avocado and place in a bowl with the dill, mint, salt, pepper and juice.
  • Lightly mash with a fork and fold in ⅔ of the cheese.
  • Pile on to hot toast and scatter with remaining feta and extra dill or mint.
  • Toss the cherry tomatoes and onion with the olive oil, and salt and pepper and serve on top or alongside.
