Smashed Avo on Toast

Smashed Avo on Toast -  Bill Granger is often credited with inventing Avocado on Toast, but there is a good argument that it most likely first arose in Mexico.

Ingredients
  • 1 ripe Avocado
  • 1 tsp finely chopped Dill
  • 3 Mint Leaves - finely chopped
  • Salt and Pepper to taste
  • 1 tbsp Lime or Lemon Juice
  • 60 g Feta Cheese - crumbled
  • 0.5 a Red Onion - finely sliced
  • 100 g Cherry Tomatoes - halved
  • 2 slices Thick Toast
  • 2 tbsp Olive oil
Instructions
  1. Roughly chop the avocado and place in a bowl with the dill, mint, salt, pepper and juice.
  2. Lightly mash with a fork and fold in ⅔ of the cheese.
  3. Pile on to hot toast and scatter with remaining feta and extra dill or mint.
  4. Toss the cherry tomatoes and onion with the olive oil, and salt and pepper and serve on top or alongside.
