Lebanese Roast Tofu – 
A quick and easy roast tofu recipe with a zesty Lebanese-inspired marinade

  • Whisk the lemon juice, stock, oil, garlic, thyme, paprika, cumin and cayenne pepper in small bowl.
  • Place the tofu in a dish, pour the marinade over and turn to coat.
  • Cover and refrigerate for at least 6 hours or overnight, turning occasionally.
  • Preheat oven to 220°C (200℃ fan-forced).
  • Transfer the tofu and marinade to a large roasting pan and season with salt and pepper.
  • Bake until golden brown and cooked through, occasionally basting with pan juices, about 25 minutes.
  • Transfer to plates and garnish with lemon. Pass the pan juices separately. Serve with roast potatoes.
