Lebanese Roast Tofu

Lebanese Roast Tofu -  A quick and easy roast tofu recipe with a zesty Lebanese-inspired marinade

Ingredients
  • 3 tbsp Lemon juice
  • 0.5 cup Vegetable stock (OR vegetarian Chicken stock)
  • 1 tbsp Olive oil
  • 4 large Garlic cloves - minced
  • 3 tsp fresh Thyme chopped (OR 1/2 tsp dried)
  • 2 tsp Paprika
  • 0.75 tsp ground Cumin
  • 0.125 tsp Cayenne Pepper
  • 375 g firm Tofu - drained but not pressed - cut into 25 mm thick slices
  • ~ Lemon wedges to serve
Instructions
  1. Whisk the lemon juice, stock, oil, garlic, thyme, paprika, cumin and cayenne pepper in small bowl.
  2. Place the tofu in a dish, pour the marinade over and turn to coat.
  3. Cover and refrigerate for at least 6 hours or overnight, turning occasionally.
  4. Preheat oven to 220°C (200℃ fan-forced).
  5. Transfer the tofu and marinade to a large roasting pan and season with salt and pepper.
  6. Bake until golden brown and cooked through, occasionally basting with pan juices, about 25 minutes.
  7. Transfer to plates and garnish with lemon. Pass the pan juices separately. Serve with roast potatoes.
