A ubiquitous spice blend used throughout India.  The precise constituents and proportions vary from region to region but this mixture is a backbone for those regional variations.

Alternatively, you can use the same quantities of whole spices and ground Turmeric and ground Cinnamon.

Heat a small frying pan to a medium-high heat add the whole spices and dry fry, agitating, until the cumin seeds darken and become fragrant.  Remove from the heat and grind to a fine powder.  Mix in the turmeric and cinnamon.
