Moroccan-Spiced Chicken Tagine 
The flavours of North Africa – don’t be put off by the number of ingredients, nothing unusual and pretty straightforward once you get them assembled.

  • Sauté the seitan in 2 TBS of the oil over medium heat - until lightly browned. Then set aside.
  • Add the remaining 1 TBS of oil, the onion, zucchini and tomatoes and simmer until the onion softens.
  • Add all remaining ingredients and stir to combine.
  • Bring to a boil then reduce the heat to a steady simmer. Cover and cook for 20 minutes.
  • Return the seitan to the pan and cook for 5 minutes, to warm through.
  • Serve on a bed of couscous and garnish with the coriander leaves.
