Moroccan-Spiced Chicken Tagine
The flavours of North Africa – don’t be put off by the number of ingredients, nothing unusual and pretty straightforward once you get them assembled.

Sauté the seitan in 2 TBS of the oil over medium heat - until lightly browned. Then set aside.
- Add the remaining 1 TBS of oil, the onion, zucchini and tomatoes and simmer until the onion softens.

Add all remaining ingredients and stir to combine.

Bring to a boil then reduce the heat to a steady simmer. Cover and cook for 20 minutes.
- Return the seitan to the pan and cook for 5 minutes, to warm through.

Serve on a bed of couscous and garnish with the coriander leaves.
