Roasted Tomato Salad
I LOVE roast tomatoes – they are SWEET and SQUISHY – I’ve also seen this served with Feta and Olives

Heat oven to 180°C (160°C fan-forced).

Place the medley tomatoes, onion and garlic cloves in a baking tray with the olive oil, season with salt and pepper, and toss to coat. Roast until the tomatoes begin to burst – 15 to 20 minutes.

Place the roasted, sun-dried and cherry tomatoes on a serving plate, season with salt and pepper, scatter with basil leaves and serve.
