Lentil and Sweet Potato Curry

Lentil and Sweet Potato Curry  It's very simple and doesn't look like much, but the flavour is WOW

Ingredients
  • 2 tbsp Olive Oil
  • 1 Red Onion - finely sliced
  • 2 clove Garlic - finely sliced
  • 1 tbsp finely chopped or grated Ginger
  • 2 tsp Curry Powder
  • 3 Cardamom Pods - crushed
  • 0.25 tsp Cayenne Pepper
  • 1 cup Red Lentils
  • 1 small Sweet Potato - Peeled and cut into 2.5 cm dice
  • 3 cup Water
  • 1 head Broccoli - in small florets
  • 2 handsful Baby Spinach
  • 2 tbsp Plain Yoghurt
  • 1 handful Coriander Leaves
Instructions
  1. Heat olive oil in a saucepan, over a medium heat, and cook seasoned onions and ginger until soft - about 10 minutes. Add the garlic, stir through and cook for 2 minutes.
  2. Add the spices and cook for 2 minutes.
  3. Raise the heat,add the lentils and water, bring to the boil then simmer gently for 10 minutes.
  4. Add the sweet potato and simmer for 10 minutes.
  5. Add the broccoli and simmer for 5 minutes.
  6. Stir through the baby spinach and yoghurt.
  7. Serve with coriander and your favourite chutney.
