Spicy Italian Sausages

Spicy Italian Sausages  Mushrooms, Onion and Black Beans - These are absolutely brilliant – masses of flavour and perfect texture.

Ingredients
    Spice Mix
  • 0.5 tsp dried Basil
  • 0.5 tsp Chilli Flakes
  • 1.5 tsp Garlic Powder
  • 1 tsp dried Oregano
  • 1.5 tsp Sweet Paprika
  • 0.5 tsp Smoked Paprika
  • 0.5 tsp Black Pepper
  • 1 tsp table Salt
  • Sausage Mix
  • 1 Egg - beaten (OR 1 "flax egg" see NOTE)
  • 3 tsp Olive Oil
  • 0.25 cup finely chopped Onion
  • 1 cup finely chopped Mushrooms
  • 1 clove Garlic - minced
  • 425 g tin of Black Beans - rinsed and drained
  • 2 tbsp sun-dried Tomatoes - chopped
  • 2 tbsp fresh Basil - roughly chopped
  • 0.25 cup Nutritional Yeast
  • 0.5 cup Rice Flour
  • 1 tbsp Worcestershire Sauce
Instructions
  1. Place the spice mix ingredients in a small bowl and mix to combine, set aside.
  2. If using flax meal, mix the meal and water and set aside to thicken OR beat the egg.
  3. Sauté the onion, mushrooms and garlic in 2 tsp of the oil, over a medium heat until softened – about 5 minutes.
  4. Meanwhile, mash the beans until they are broken up and about three quarters have been reduced to paste.
  5. Add the tomatoes, basil, yeast, rice flour and spice mix and stir well.
  6. Add the flax mixture OR beaten egg, the onion mixture, the Worcestershire sauce and the remaining 1 tsp of oil and mix until combined.
  7. Lay out 6 pieces of aluminium foil, each 30cm square, and place ⅓ cup of the sausage mixture about 10cm from the bottom of each sheet.
  8. Form each portion into a log – the mixture will be very sticky, so use a spatula. Bring the bottom of the sheet over each log and then roll towards the top of the sheet. Twist the ends of each roll to seal.
  9. Place the foil logs into a steamer and steam, covered, for 20 minutes.
  10. When done, put aside until cool enough to handle and then unwrap. Cook on an oiled barbecue hotplate or frying pan.
Recipe Notes

1 "flax egg" - combine 3 tsp ground flaxseed and 2 TBS warm water
