Mexican Bean Salad

Mexican Bean Salad Super easy, refreshing salad to go with your chilli

Ingredients
  • 420 g tin 4 bean mix - drained and rinsed
  • 250 g cherry tomatoes - quartered
  • 0.33 cup tinned baby corn - roughly chopped
  • 0.33 cup cucumber - diced
  • 0.33 cup capsicum (bell pepper) - diced
  • 0.25 cup onion - diced
  • 0.25 cup jalapeno chillis - diced (Optional)
  • 0.33 cup olive oil
  • 2 tbsp lime juice
  • 1 tsp cracked black pepper
Instructions
  1. Drain the tin of 4 bean mix and rinse under cold water.
  2. Pour the 4-bean mix into a medium sized bowl, add the chopped vegetables and jalapeƱos (if using) and mix well.
  3. Pour the olive oil into a small bowl and add the lime juice and cracked pepper. Whisk to combine.
  4. Pour the dressing over the salad mix.
