Lemon Mustard Tofu

Lemon Mustard Tofu  This simple baked tofu is quick and easy but very tasty

Ingredients
  • 1 block Firm or Extra Firm Tofu - pressed
  • 2 tbsp Soy sauce (OR Tamari)
  • 2 tbsp Lemon juice
  • 2 tbsp Olive Oil
  • 1 tbsp grainy Dijon Mustard
  • 1 tsp Sugar
  • 0.5 tsp dried Basil
  • 0.5 tsp dried Thyme
  • Salt and Pepper
Instructions
  1. Slice the tofu into 1cm thick strips.
  2. Whisk together all ingredients except the tofu.
  3. Transfer to a shallow and add the tofu, turning to coat.
  4. Marinate for at least 1 hour and up to overnight in the ‘fridge (the longer the better).
  5. Heat oven to 180°C (160°C fan-forced).
  6. Transfer tofu and marinade to baking dish and bake for 20-25 minutes, turning halfway through.
  7. Serve with roast potatoes.
