Lebanese Roast Potatoes -
Soft roast potatoes with an oily lemony finish.

Instructions

Preheat the oven to 220˚C (200˚C fan-forced).

Toss the potatoes, in a large bowl, with the olive oil and salt.

Transfer to an oven tray and roast for 40 minutes, turning once, until golden.

Heat the olive oil in a large frying pan over a medium-high heat, add the garlic and coriander and cook for 1–2 minutes until the garlic starts to change colour.

Add the lemon juice and the hot potatoes to the pan and toss lightly to coat.

Season to taste and sprinkle with the cayenne pepper.
