Kentucky Fried Seitan

Kentucky Fried Seitan -  Colonel Sanders would probably not approve – apart from containing no chicken, it has 14, not 11, Herbs and Spices. Don't be put off by the number of ingredients - the result is truly worth it.

Ingredients
    Seitan
  • 250 g firm Tofu - well pressed
  • 150 ml Soy milk
  • 2 tsp Miso paste
  • 2 tsp Yeast extract - Vegemite OR Marmite OR Promite
  • 1 tsp dried Tarragon
  • 1 tsp dried Sage
  • 1 tsp dried Thyme
  • 1 tsp Onion powder
  • 2 tsp Garlic powder
  • ~
  • 160 g Vital wheat gluten
  • 10 g Nutritional yeast
  • 30 g Besan flour (Chickpea flour)
  • 0.5 cup Rolled oats
  • Coating
  • 0.75 tsp dried Thyme
  • 0.75 tsp dried Basil
  • 0.75 tsp dried Oregano
  • 1 tsp dried Sage
  • 0.75 tsp ground Ginger
  • 1 tsp Table salt
  • 0.5 tsp ground Black Pepper
  • 0.5 tsp ground White Pepper
  • 1 tsp Mustard powder
  • 1 tsp Sweet Paprika
  • 1 tsp Garlic powder
  • 0.25 tsp Brown Sugar
  • Batter
  • 50 g Besan flour (Chickpea flour)
  • 60 ml Water
  • 30 g plain Flour
Instructions
  1. Blitz the tofu, soy milk, miso paste, yeast extract, tarragon, sage, thyme, onion powder and garlic powder in a food processor until smooth.
  2. Transfer the mixture to a bowl and add the gluten yeast, besan and oats – mixing together to form a firm dough – take care to ensure that you pick up all the dry ingredients.
  3. Turn out the dough and knead and stretch for 10 minutes until it becomes springy. ALTERNATIVELY, Place the wet ingredients into the bowl of a mixer fitted with dough hooks, slowly add the dry mixture whilst the mixer is running and knead for ten minutes.
  4. Divide the dough into 6 portions and roll out to 1 cm thickness. Place in a steamer and steam for 45 minutes.
  5. Meanwhile, combine the coating ingredients and place on a plate.
  6. Once the seitan has steamed and is cool enough to handle, make the batter by mixing the besan flour and water.
  7. When ready to cook, dip the seitan pieces in the flour, then in the batter, then in the breadcrumb mixture to coat all over.
  8. Cook the pieces in oil over a medium-high heat until dark and crispy – 3 minutes a side.
  9. Serve with coleslaw (see NOTE) and mashed potatoes.
