Green Bean Quiche

Green Bean Quiche - I remember cooking quiche when living in college - the other students thought it very sophisticated and clever - I didn't let on how easy it is.

Ingredients
  • 200 g Green beans (Topped and halved)
  • 0.5 Medium brown onion (≈ 100g) (Diced)
  • 1 tbsp Butter or olive oil
  • 80 g Button mushrooms (Sliced)
  • 0.33 Green capsicum (bell pepper) (Diced)
  • 0.5 cup Milk
  • 2 tbsp Sour cream OR mayonnaise
  • 4 Eggs (Beaten)
  • 1 Sheet short crust pastry
  • 1 Medium tomato (Skinned, cored and diced)
  • 0.5 cup Sharp tasty cheese (Shredded)
Instructions
  1. Preheat the oven to 180°C (160°C fan-forced).
  2. Place the beans in a saucepan, cover with water, bring to the boil, reduce the heat and simmer, covered, for 5 minutes. Alternatively, microwave, on high, for 3 minutes.
  3. Sauté the onion, in the butter (oil), over a medium heat, until translucent.
  4. Add the mushrooms and capsicum (bell pepper) and continue to cook until the mushrooms are cooked.
  5. Meanwhile, combine the milk, sour cream and eggs in a large bowl.
  6. Add the beans and mushroom mixture and stir to combine.
  7. Grease a 20cm pie dish and line the base and sides with the pastry. Cover the base with baking paper and fill with uncooked rice or pastry weights.
  8. Bake for 10 minutes, remove the rice/weights and paper and bake for a further 10 minutes.
  9. Fill with the mixture, top with the tomatoes and cheese and bake until golden brow and just set – 20 to 25 minutes.
